This Pét Nat was almost forgotten in the cellar, until OFF GRID (a natural wine shop in Stuttgart) came across it and snapped up the 200 bottles! 100% Trollinger – a grape rarely found outside this region – this wine has no filtration or added sulphites, just one rough disgorge- ment to prevent the bottle exploding upon opening! After one week of cold macera- tion the grapes were pressed and fermented in stainless steel, followed by three years on full lees. Drink chilled and enjoy with a typical Swabian Vesper.
